Marinated Fiddlehead Ferns
To serve 10 as a first course or 8 as a salad
3 cups water
5 tablespoons wine vinegar
3 tablespoons strained fresh lemon juice
1/2 cup vegetable oil
2 medium-sized celery stalks, trimmed of all leaves and finely chopped
1 teaspoon coriander seeds
1 teaspoon fennel seeds
6 whole black peppercorns
1 1/2 teaspoons salt
3 cups fresh fiddlehead ferns, thoroughly washed and trimmed, or substitute two 10-ounce packages frozen fiddlehead ferns,

   Wrap together in cheesecloth: 1 teaspoon coriander seeds, 1 teaspoon fennel seeds and 6 whole black peppercorns.

   In a 3- to 4-quart enameled or stainless-steel saucepan, combine the water, vinegar, lemon juice, oil, celery, the cheesecloth bag of coriander, fennel and peppercorns, and the salt. Bring to a boil over high heat, then reduce the heat to low. Stir in the fiddleheads and simmer partially covered for 15 to 20 minutes, or until the ferns are tender.

   Remove and discard the bag of coriander, fennel and peppercorns. Drain the fiddleheads and celery in a sieve or colander and place them in a serving bowl. Cool to room temperature, cover with plastic wrap and refrigerate for at least 2 hours before serving.
